A Chance Encounter. A Shared Vision. A Delicious Reinvention.

At age 50, after 22 years of baking for friends and family, I was discovered on Instagram for my cake artistry and was hired as head pastry chef at an upscale Chicago restaurant. Head Pastry Chef– I like the sound of that!  I had always been a fan of baking shows, especially The Great British Bakeoff with its warm and kind-hearted host.  How hard could it be?

Oh how wrong I was! It turns out the restaurant vibe was more “The Bear than Bakeoff”.  With no prior experience working in restaurants, I spent every day feeling “in the weeds”—overwhelmed, juggling orders, and trying to prove myself in the fast-paced, high-pressure kitchen. 

As luck would have it, Georgios, my co-founder, walked into the restaurant and everything changed.  Geogios, a RnD pastry developer, a virtuoso of confectionery science, brought a calming precision to the chaos. He became my greatest ally, helping me navigate the demands of the kitchen with his mastery of ingredients and processes.

Our shared passion for crafting indulgent desserts sparked something bigger: a vision for creating a new kind of product—one that would blend culinary pleasure with daily nourishment in a way that felt effortless and enjoyable.
